The main differences are:
Rslinx Pro allows you to do DDE data collection into office programs or anything else that supprots OLE.

Rslinx Gateway allows OLE and serves as a gatway to the PLC networks connected to the PC it is installed on. Say you had a DH+, DH485 or Enet connection and RSGateway on one PC and another Lan card tied into a network. A pc with RSLogix and RSLinx installed can drill into the PLC network through the gateway. Or using net DDE the gateway can be used for data mining. ( Tough to set up -easier to use linx on the second machine.) Opc clients can also link through the gateway.

Both have other features also but these are the main differences used to select which version.
